College career

Rutgers

In Simon's first collegiate season in 2021, Simon completed 16 of his 28 pass attempts for 145 yards and an interception.[3] Simon finished the 2022 season playing in nine games with two starts, where he would complete 79 of his 133 passes for 777 yards and four touchdowns, with six interceptions.[4] During the 2023 season, Simon appeared in just one game for the Scarlet Knights, where he completed two of his three pass attempts for 30 yards and a touchdown.[5] After the conclusion of the 2023 season, Simon decided to enter his name into the NCAA transfer portal.[6][7]
