Arnold Bakke (født 17. februar 1872, død 7. mars 1956) var en norsk kjemiker som ble sjefkjemiker for Nestlé. Han var med på å finne opp Viking Melk og Nescafé.

Utdanning

Han gikk på skole i hjembyen, først Hamar Offentlige skole (fra 1936 benevnt Hamar katedralskole) i tiden 1880–89. Der gjennomførte han middelskole og gymnas, men strøk til artium.[2] Tre år senere kontet han og stod, og etter studier ved universitetene i Oslo og i Munchen, endte det med en doktorgrad ved Universitetet i Kiel i 1898.

Forskning og utvikling

I Kiel jobbet han for den tyske melkeforsker Hermann Weigmann (1856–1950) som i 1889 hadde startet Bundesanstalt für Milchforschung. Der drev de på med eksperimentell bakteriologi og melk.

Han vendte tilbake til heimtraktene og fikk i 1898 jobb hos Kapp Melkefabrikk på Østre Toten som var grunnlagt av broren, soppforskeren Olav Johan Sopp.

Sjokoladefabrikken var i 1898 nettopp oppkjøpt av sveitsiske Nestlé. De to fant en måte å lage kondensert melk på, den ble kalt Viking Melk og blir fortsatt laget og solgt i 2020.[3]

Etter et par år, flyttet Bakke til Sveits og fikk jobb ved hovedkvarteret, etterhvert som sjefkjemiker og forskningssjef.

På 1930-tallet jobbet han blant annet, med Max Morgenthaler om undersøkelser av tørkefrosset kaffe, som i 1938 ble til oppfinnelsen Nescafé, fortsatt i produksjon i 2020.[4]

Handelsdiplomati

Han bodde i Vevey på den nordlige kyst av Genfersjøen. Der var han også visekonsul for Norge. Fra 1932 var han tilknyttet Norges legasjon i Bern som handelsråd for Norge, med ansvar for å ordne med salg av fisk til Sør-Europa.[5] Dikteren Halldis Moren Vesaas var hans sekretær 1930–33.[6]

Fordi han var visekonsul ble han den 23. november 1923 utnevnt til ridder av St. Olavs Orden.[7]

Slekta

Bakke var født Backe men fikk i 1913 lov å kalle seg bare Bakke etter slektsnavnet Bakken i Sogndal. Han var sønn av Bertha Marie Omdahl og Johannes Olsen som drev garverifabrikk. Videre var han bror til Olav Johan Sopp, samt bror til Marcus Omdahl (1863–1917) og Ewald Omdahl som i 1902 grunnla lærfabrikken Omdahl, Marcus & Ewald, A/S.[8] Dermed ble han grandonkel til Gudrun Omdahl Onshuus.

Bakke var gift 1898 til 1912 med Ellen Seehusen fra Danmark. Omkring år 1909 var han kjæreste med Cora Sandel.[9] Så var han gift fra 1913 til 1936 med Johanna Tandberg.[10] Hun var søster av musikkpedagog Elise Tandberg.
