Kumru, İzmir'e özgü coğrafi işaretli bir tür sandviçtir.[1] Kumru simit hamuruna benzeyen az tuzlu bir hamurdan üretilir, susama batırılarak fırınlanır. Şekli kumru kuşunun gövdesini andırdığından bu ismi almıştır. İzmir'de kumru fırınlarda sade olarak satıldığı gibi sokak satıcıları ve tezgâhlarda içerisine domates, turşu, yeşil biber ve İzmir tulum peyniri konmuş olarak da satılır. Ayrıca büfelerde, içine kömürde pişirilmiş sucuk, salam, kaşar peyniri (bir başka çeşidinde de ek olarak eritilmiş Sayas peyniri bulunur) ve domatesin yanı sıra üzerine ketçap ve mayonez eklenmesi ile hazırlanmış sandviç olarak da tüketime sunulur. Normal İzmir kumrusu ise Bergama tulum peyniri veya İzmir tulum peyniri, domates, biber[2] ve (isteğe göre) salatalıktan oluşur. Ekmeğinin bol susamlı olması da bir özelliğidir. Bazı sandviççiler ise sandviç ekmeğinin içerisine hazırlanan bol malzemeli karışık sandviçleri yanlış biçimde kumru olarak adlandırmaktadırlar. Bu sandviç kömürde sandviçtir.[3]
