Asam kaprilat adalah asam lemak jenuh, dan asam karboksilat, dengan rumus struktur CH3(CH2)6CO2H. Diklasifikasikan sebagai asam karboksilat, itu adalah cairan berminyak tidak berwarna yang dapat larut dalam air dengan aroma dan rasa tengik yang agak tidak menyenangkan. Garam dan ester dari asam oktanoat dikenal sebagai oktanoat atau kaprilat. Ini adalah bahan kimia industri umum, yang diproduksi oleh oksidasi aldehida C8.[4]

Senyawa ini ditemukan secara alami dalam susu berbagai mamalia, dan sebagai konstituen minor dari minyak kelapa dan minyak inti sawit.
