Sapi eropa atau sapi taurus (nama ilmiah: Bos taurus taurus) adalah subspesies sapi ternak yang berasal dari Timur Dekat. Baik sapi eropa maupun sapi zebu merupakan keturunan dari nenek moyang yang sama yaitu urus. Awalnya, sapi eropa dianggap sebagai spesies sendiri, tetapi kini dianggap sebagai spesies yang sama dengan sapi zebu dan urus, yaitu Bos taurus.[1][2][3] Kebanyakan ras sapi modern berasal dari subspesies ini.

They were originally named as separate species, Bos taurus and Bos indicus, but they are interfertile and now generally regarded as a single species.
