Sie sind in der Europäischen Union als Lebensmittelzusatzstoffe unter der gemeinsamen Nummer E 340 zugelassen.[1]

Lösen sie sich in Wasser unter physiologischen Bedingungen, bei pH 6–7, liegt ein Gleichgewicht von Hydrogenphosphat- und Dihydrogenphosphat-Anionen vor.[2]
