Vanillearoma ist ein häufig eingesetztes Aroma. Es findet Verwendung in Lebensmitteln, Parfums und Körperpflegemitteln.

Vanillin (chemische Strukturformel)

Die wichtigste Aroma-aktive Substanz in Vanille sowie synthetischem Aroma ist Vanillin. In Vanilleschoten wird Vanillin größtenteils nach der Ernte während Trocknungs- und Fermentationsprozessen gebildet. Als Begleitstoffe treten vor allem p-Hydroxybenzaldehyd, p-Hydroxybenzoesäure, Vanillinsäure, Vanillylalkohol und p-Hydroxybenzylalkohol auf. Deren Vorkommen ist ein Indiz für natürliche Extrakte und kann in der Lebensmittelanalytik mittels HPLC oder GC nachgewiesen werden. Alternativ kann die Stabilisotopenanalytik als Herkunftsnachweis verwendet werden.[1]
