Polisacárido

Os polisacáridos son hidratos de carbono formados por combinación dun número variable de monosacáridos (entre dez e varios miles). Polo seu interese na alimentación cómpre destaca-los seguintes:

Estrutura química do glicóxeno
  • Amidón: constitúe a principal reserva de hidratos de carbono nos alimentos de orixe vexetal. O amidón almacénase en forma de gránulos de forma e tamaño diversos, propios de cada especie vexetal. O amidón é insoluble en auga, polo que non se pode dixerir sen un tratamento térmico adecuado previo: a cocción dos alimentos ricos en amidón (como a pataca ou a fariña) faino dixerible.
  • Glicóxeno: unicamente presente en alimentos de orixe animal, nos que constitúe unha forma de reserva de glicosa equivalente á do amidón nos vexetais. O glicóxeno localízase no músculo e no fígado.
  • Celulosa: formada por miles de moléculas de glicosa, atópase na membrana das células vexetais. Resulta indixerible para o home e os animais carnívoros mentres que os herbívoros contan cunha flora intestinal capaz de degradala e asimilala.
  • Fibra alimentaria: constituída pola combinación de diversos polisacáridos (como a celulosa, pectina e outros) xunto á lignina, que non é un hidrato de carbono. A fibra alimentaria dá a estrutura fibrosa característica das verduras, froitas ou cereais. Non é asimilable pero resulta imprescindible para un correcto funcionamento do aparato dixestivo.

Outros polisacáridos presentes nos alimentos son os que constitúen as gomas hidrocoloidais, de diversa composición e características.
